Chiva-Som at Isika
This time I had been beaten. You see, I love having to guess what’s for lunch and I especially relish the challenge of picking the hidden elements that tie the whole dish together. Today I was enjoying lunch, literally in the clouds, at Isika, Crown Metropol’s sensational sky-high residential day spa. Today it was raining heavily, with clouds sweeping across Melbourne in front of me. The torrential rain followed by brilliant sunshine was a perfect accompaniment for the sensory Thai dishes placed before us.
Until 22 April, award-winning Thai health and wellness resort, Chiva-Som will provide Isika’s diners and spa enthusiasts with a “Taste of Chiva-Som”, showcasing their award-winning spa cuisine and signature treatments. Leading Chiva-Som therapists will join the team at Isika to provide some of the resort’s most popular treatments including Rolling Release Therapy, Haven Body Polish and Chiva-Som’s ever-popular Signature Massage.
Earlier in the day, I met my therapist in the haven lounge for a Deep Tissue Massage. She lead me to my private treatment room, complete with ensuite, for the start of a sublime deep-tissue massage with wonderful aromatic oils. As a member of the physiotherapy team at Chiva-Som it was clearly evident that my therapist had a great knowledge of muscular anatomy, as she worked her way through the routine, adjusting my limbs, applying strokes to the origins and insertions of the muscle groups, and focussing on key areas of tension. It was a flowing, integrated experience, moving from sector to sector with ease, without breaking the flow, providing a truly relaxing massage from head to toe.
Feeling absolutely relaxed, I found myself sitting down to a fabulous lunch, prepared by Paisarn Cheewinsiriwat, Executive Chef at Chiva-Som. Each dish had all the elements of truly great cuisine: aroma, colour, texture and composition on the plate, followed by great tastes that enlivened the palate and lingered well after the food left my mouth. The integration of flavours was particularly noticeable, with wonderfully fresh and fragrant ingredients. Surprised and intrigued by turn, I really enjoyed each of the courses, although I couldn’t always pick the subtle magic ingredients. Each dish was an inspiring creation, using traditions from Europe and Asia, made from wonderfully fragrant ingredients from around the world, but with a uniquely Thai signature. For instance, for dessert, we had a poached pear, a French tradition poached with wine, but here we had a distinctly Thai experience poached with coconut water and chai tea.
Paisarn will host a number of three-hour spa cuisine cooking classes in the purpose-built Culinarium, located within Crown Metropol. Places are still available for Saturday 16 and Sunday 17 April, with guests to learn from the master chef himself, and take home a DVD of the experience.“Chiva-Som’s spa cuisine revolves around their philosophy that food should be fresh, healthy and full of flavour.
